Barbecue Lion's Mane Mushroom Steaks
Ingredients
- Lion's Mane Mushrooms
- Rapeseed Oil (Canola Oil) & Olive Oil Blend
- Barbecue Seasoning
- Sage and Onion Granules (or Rubbed Sage, Onion Granules, Garlic Granules, Salt, and Pepper)
- Black Pepper
- Salt
- Vegan Butter
- Barbecue Sauce
Instructions
Preheat Oven: Preheat a convection oven to 200 degrees Celsius (400 degrees Fahrenheit) on fan. If no fan, increase to 425 degrees Fahrenheit or higher.
Prepare Mushrooms: Trim the bottom of the lion's mane mushrooms to create an even surface.
Heat Pan: Heat a cast iron pan on the stovetop.
Add Oil: Coat the bottom of the hot pan with a blend of rapeseed (or canola) and olive oil.
Sear Mushrooms (First Side):
- Place the mushrooms in the hot pan.
- Let them sit to adjust to the heat.
- Rest a pan on top of the mushrooms for a minute before pressing.
- Gently press the mushrooms to sear, allowing moisture to release and caramelize the edges.
- Add more oil as needed to maintain searing.
Season Mushrooms (First Side):
- Season the top side with barbecue seasoning, black pepper, and salt.
- Add a little more oil to prevent sticking.
Flip and Sear (Second Side):
- Flip the mushrooms and press again to release more liquid.
- The sizzling will slow down as moisture is released.
Season Mushrooms (Second Side):
- Season the top side with barbecue seasoning.
Press Again: Press the mushrooms again to achieve desired thickness (cutlet-style).
Final Seasoning: Season one more time on each side, touching up with a little more oil.
Bake: Place the pan in the preheated oven for about 10 minutes.
Deglaze Pan and Make Sauce:
- Remove the pan from the oven.
- Remove the steaks to a cutting board.
- Add a bit of vegan butter to the pan to deglaze, scraping up browned bits.
- Add barbecue sauce and heat through.
Slice and Serve:
- Thinly slice the lion's mane mushroom steaks.
- Serve with the buttery barbecue sauce.
