Easy Vegan Eats! (quick "instant pot" hacks) | The Wicked Kitchen

Loaded Baked Potato with Coconut Corn and Peas (Recipe 1 of 2)

Ingredients

  • 2 baked potatoes
  • 1 Wicked Kitchen Coconut Crack Corn instant pot
  • 1 cup frozen peas
  • Green onion, sliced, for garnish
  • Red chili pepper, sliced, for garnish
  • Boiling water

Instructions

  1. Prepare the Instant Pot:

    • Open the Coconut Crack Corn pot.
    • Add boiling water to the fill line.
    • Give it a quick stir.
    • Let it sit for 5 minutes.
  2. Cook the Frozen Peas:

    • Place the frozen peas in a Pyrex dish.
    • Add water to the dish.
    • Cook until heated through (chef uses the same water as the instant pot).
  3. Prepare the Baked Potatoes:

    • Cut a crisscross pattern on the top of each baked potato.
    • Use a fork to smash the inside a little bit.
    • Open up the potato to prepare for toppings.
  4. Assemble the Loaded Baked Potatoes:

    • Pour the Coconut Corn sauce over the potatoes.
    • Add the cooked peas to the pot and mix with the remaining sauce.
    • Spoon the pea and sauce mixture over the potatoes.
  5. Garnish:

    • Garnish with sliced green onion and red chili pepper.

Spicy Smoky Mac and Cheese with Seared Tofu and Spring Greens (Recipe 2 of 2)

Ingredients

  • 1 Wicked Kitchen Spicy Smoky Dreamy Mac and Cheese instant pot
  • 1/2 block extra-firm tofu, cut into bite-sized chunks
  • 1/2 bag (120g) spring greens
  • Black pepper
  • Salt
  • Oil
  • Water (to fill line in the pot)

Instructions

  1. Prepare the Tofu:

    • Cut the tofu into bite-sized chunks.
    • Season with black pepper and salt.
  2. Sear the Tofu:

    • Heat a cast iron pan over medium-high heat until "ripping hot".
    • Add oil to the pan.
    • Add the tofu to the pan and sear each side for a couple of minutes until browned.
  3. Cook the Spring Greens:

    • Add the spring greens to the pan alongside the tofu.
    • Allow the greens to soak up the flavors in the pan.
  4. Prepare the Mac and Cheese:

    • While the tofu is cooking, add water to the fill line of the Spicy Smoky Dreamy Mac and Cheese pot.
    • Give it a quick stir and let it sit for 5 minutes.
  5. Assemble the Dish:

    • Add the prepared mac and cheese to the pan with the tofu and greens.
    • Stir everything together.
  6. Serve:

    • Serve the mac and cheese with tofu and greens immediately.
