Ingredients
For the Mushrooms:
- King oyster mushrooms (9 mushrooms, from 3 containers)
- Oil (for searing)
- Garlic granules
- Salt
- Pepper
- Vegan butter (for roasting)

- Vegan butter
- Garlic (5 cloves, minced)
- Orange (1/2, juiced)
- Lemon (1/2, juiced)
- Lime (1/2, juiced)
- Agave (1 tablespoon)
- Parsley (fresh, chopped)

Instructions
Prepare the King Oyster Mushrooms:
- Cut the mushrooms in half lengthwise.
- Score the cut side of each mushroom half in a crosshatch pattern.
Sear the Mushrooms:
- Warm a cast iron skillet over low heat.
- Add a little oil to the pan.
- Place the mushroom fillets cut-side down in the hot pan and press with another skillet or pot to ensure even searing.
- Sear until golden brown, about 2-3 minutes. (Pressing the mushrooms helps them maintain their shape and sear evenly.)
- Season with garlic granules, salt, and pepper.
- Add a little more oil.
- Flip the mushrooms and press lightly.
- Transfer the seared mushrooms to a baking sheet.
- Repeat with the remaining mushrooms.
Prepare the Garlic Butter:
- In the same skillet (turned to low heat), melt the vegan butter.
- Add the minced garlic and cook briefly until fragrant, being careful not to burn the garlic.
Roast the Mushrooms:
- Place the baking sheet with the seared mushrooms in a preheated oven (temperature not specified) for about 10 minutes to finish cooking.
Make the Citrus Glaze:
- Juice the orange, lemon, and lime into a strainer over a saucepan.
- Bring the citrus juice to a boil over medium heat.
- Add the agave and whisk to combine.
- Reduce the heat to low and slowly drizzle in the melted garlic butter, whisking constantly to emulsify and prevent it from breaking.
- Season with a little salt to taste.
- Stir in the chopped parsley.
Glaze and Serve:
