Apple Pie Oatmeal
Ingredients
For the Oatmeal:
- 1 cup rolled oats (for two people)
- Approximately 1/4 pint (almost 1/4 cup) water, plus more as needed
- 6 dates, pitted and sliced
For the Apple Pie Topping:
- 2 apples, diced (plus 1 apple for garnish)
- 1 teaspoon brown sugar
- 1/2 teaspoon cinnamon
- 2-3 tablespoons raisins (or a half handful)
- 2-3 tablespoons pumpkin seeds
- 1/2 teaspoon vanilla extract
Garnish:
- Banana slices
- Fresh mint (optional)
Instructions
Soak the Oats and Dates:
- Place the rolled oats in a bowl.
- Add approximately 1/4 pint of water to the oats.
- Set aside to soak.
- Slice the dates and add them to the oats to soak.
Prepare the Apples:
- Dice two apples, saving one apple for garnish.
- Slice the remaining apple into thin pieces for garnish.
Caramelize the Apples:
- Heat a pan (cast iron recommended) over medium heat.
- Add the diced apples to the pan.
- Add 1 teaspoon of brown sugar and 1/2 teaspoon of cinnamon.
- Cook for 3-4 minutes, until the apples are caramelized.
- Stir in the raisins, pumpkin seeds, and vanilla extract. Cook until heated through.
- Reserve a portion of the cooked apple mixture for topping.
Cook the Oatmeal:
- Add the soaked oats to the pan with the remaining apple mixture.
- Stir to incorporate the flavors.
- Cook until the oatmeal reaches your desired consistency (either wetter or stiffer).
Assemble and Garnish:
- Transfer the apple pie oatmeal to a bowl.
- Top with the reserved apple mixture.
- Add banana slices.
- Garnish with fresh mint and sliced apple.
