🍏 Apple Pie Oatmeal 🍏| The Wicked Kitchen

Apple Pie Oatmeal

Ingredients

For the Oatmeal:

  • 1 cup rolled oats (for two people)
  • Approximately 1/4 pint (almost 1/4 cup) water, plus more as needed
  • 6 dates, pitted and sliced

For the Apple Pie Topping:

  • 2 apples, diced (plus 1 apple for garnish)
  • 1 teaspoon brown sugar
  • 1/2 teaspoon cinnamon
  • 2-3 tablespoons raisins (or a half handful)
  • 2-3 tablespoons pumpkin seeds
  • 1/2 teaspoon vanilla extract

Garnish:

  • Banana slices
  • Fresh mint (optional)

Instructions

  1. Soak the Oats and Dates:

    • Place the rolled oats in a bowl.
    • Add approximately 1/4 pint of water to the oats.
    • Set aside to soak.
    • Slice the dates and add them to the oats to soak.
  2. Prepare the Apples:

    • Dice two apples, saving one apple for garnish.
    • Slice the remaining apple into thin pieces for garnish.
  3. Caramelize the Apples:

    • Heat a pan (cast iron recommended) over medium heat.
    • Add the diced apples to the pan.
    • Add 1 teaspoon of brown sugar and 1/2 teaspoon of cinnamon.
    • Cook for 3-4 minutes, until the apples are caramelized.
    • Stir in the raisins, pumpkin seeds, and vanilla extract. Cook until heated through.
    • Reserve a portion of the cooked apple mixture for topping.
  4. Cook the Oatmeal:

    • Add the soaked oats to the pan with the remaining apple mixture.
    • Stir to incorporate the flavors.
    • Cook until the oatmeal reaches your desired consistency (either wetter or stiffer).
  5. Assemble and Garnish:

    • Transfer the apple pie oatmeal to a bowl.
    • Top with the reserved apple mixture.
    • Add banana slices.
    • Garnish with fresh mint and sliced apple.
