Wicked Good Vegan Grilled Cheese

Ingredients

  • Bread, sliced
  • Garlic oil
  • Tomato Habanero Jam (see link in description)
  • Sliced Vegan Cheese (Smoked Gouda - Follow Your Heart recommended)
  • Avocado, sliced
  • Tomato, sliced
  • Cracked Black Pepper
  • Vegan Mayo/Vegenaise

Instructions

  1. Prepare the Bread:
    • Place slices of bread on a chopping board.
    • Spread each slice with garlic oil.
    • Spread a layer of Tomato Habanero Jam on top of the garlic oil.
  2. Assemble the Sandwich:
    • Compile sandwiches with 2 slices of vegan cheese, 2 slices of tomato, and ¼ sliced avocado per sandwich.
    • Top with the other slice of bread.
    • Spread vegan mayo on top of the assembled sandwich.
  3. Cook the Sandwich:
    • Place a baking tray on the hob and heat until wicked hot.
    • Place sandwich mayo side down on the hot tray.
    • Cook until golden on the underside.
    • Spread vegan mayo on the top side of the sandwich.
    • Turn the sandwich and cook until golden on the other side.
  4. Serve:
    • Slice the grilled cheese in half and serve immediately.

An adult grilled cheese with a kick! The tomato habanero jam adds the perfect balance of sweet and spice to this awesome sandwich. 

We made mini versions of these for an event years back and served them with shooters of fresh tomato Gazpacho—delicious! Melted smoky vegan gouda is the star here, paired perfectly with the spicy and sweet notes of the jam. Use this recipe as a base to load your favourite toppings onto, such as olives, artichokes, spinach etc. Get creative!

Directions:

Compile sandwiches; 2 slices of cheese, 2 slices of tomato and ¼ sliced avocado per sandwich. Top with bread and spread vegan mayo on top.

Slice in half and serve.
