Vegan One-Pot Pasta & Broccoli with Butter Sauce
Ingredients
For the Base:
- 1/2 Onion, julienned
- Garlic, thinly sliced
- Cherry Tomatoes, halved
- Oil (for sauteing)
- Plant-based chicken (or mushrooms, or firm tofu)
- Baby Broccoli florets
- Vegetable Stock
- Lemon juice (from 1/2 lemon)
- Plant-based Butter
- Pre-cooked Pasta (al dente)
- Black Pepper, freshly ground
- Vegan Parmesan
- Fresh Basil, chopped
- Fresh Parsley, chopped
Seasoning:
- Salt (to taste)
Instructions
- Prepare the Aromatics:
- Heat a pan over medium-high heat.
- Add a small amount of oil to the pan.
- Sauté the julienned onions until they become translucent, but not too much color.
- Add the thinly sliced garlic and cook until aromatic, being careful not to burn it.
- Add Tomatoes & Season:
- Add the halved cherry tomatoes to the pan.
- Season with salt to help release the liquids from the tomatoes and deglaze the pan.
- Cook until the tomatoes soften and release their juices.
- Add Plant-based Protein and Broccoli:
- Add the plant-based chicken (or mushrooms/tofu) to the pan.
- Allow the plant protein to sit for a moment and crisp up a little.
- Add the baby broccoli florets.
- Deglaze and Simmer:
- Deglaze the pan with vegetable stock.
- Bring the mixture to a simmer. Cover with a lid to speed up the cooking process (optional).
- Remove the lid once simmering.
- Season with salt and lemon juice to brighten up the dish.
- Add Butter and Pasta:
- Lower the heat.
- Add plenty of plant-based butter to the pan.
- Add the pre-cooked pasta to the pan.
- Stir to combine and let it simmer with the other ingredients.
- Final Touches:
- Add fresh black pepper and vegan parmesan.
- Stir in the chopped fresh basil and parsley.
- Allow the sauce to thicken from the starches in the pasta.
- Serve:
- Serve immediately.
- If making ahead of time, keep on low heat until ready to serve.
