Late Night Vegan Ravioli with White Bean Cream Sauce
Ingredients
- 1 pack Wicked Kitchen Spinach Garlic ravioli
- Boiling water
- 1 can white beans (cannellini), drained
- ½ cup Plant based milk (oat milk)
- 1 TBS Greek Style Yogurt, Vegan (Oatly)
- 1 TBS olive oil
- 2 Garlic cloves, minced
- 2 Green Onion, sliced
- 1 TBS Fresh Dill (or dried)
- Salt & Pepper, to taste
- Chili flakes, to taste
- ½ Onion, large dice
- Kale, shredded
Instructions
- Shred kale and rinse.
- Boil water in a kettle.
- Blanch the ravioli and kale in the boiling water, letting them soak while you prep the other ingredients.
- Dice the onion and green onions. Mince the garlic and dill.
- Heat olive oil in a pan.
- Add the diced onion to the hot pan and saute.
- Add the drained cannellini beans to the pan.
- Add the minced garlic, herbs (dill), and some Wicked Kitchen seasoning (or vegan bouillon) to the pan.
- Strain the water out from the ravioli and kale and add them to the pan.
- Add chili flakes to the pan.
- Add a little more boiling water to the pan.
- Cook down the mixture a little bit.
- Add the oat milk and vegan Greek-style yogurt to the pan to make it extra creamy.
- Add cracked black pepper and salt flakes to the pan.
- Reduce the sauce down, stirring to ensure everything is mixed well.
- Taste and adjust seasonings as needed.
- Serve hot.
