Homemade Harissa (vegan Inspired) | The Wicked Kitchen

Homemade Harissa

Ingredients

Spices:

  • ½ Tbs Caraway Seeds
  • ½ Tbs Cumin Seeds
  • ½ Tbs Coriander Seeds

Other ingredients:

  • 4 garlic cloves, peeled
  • 4 roasted red peppers (1 Jar = 350g drained)
  • 2 Tbs Sambal (garlic-chili paste)
  • 1 tsp Salt, kosher
  • ½ tsp Black Pepper
  • 2-3 Tbs Olive Oil

Instructions

  1. Toast the Spices:

    • Add caraway seeds, cumin seeds, and coriander seeds to a pan.
    • Toast on medium-high heat, constantly moving them around, for about 2 minutes until aromatic and slightly smoky.
    • Toasting brings out the essential oils.
  2. Grind the Spices:

    • Add the toasted spices to a mortar and pestle.
    • Grind to a semi-powder consistency (not fully ground, but with a little texture).
    • Using a mortar and pestle helps retain the essential oils compared to a spice grinder.
  3. Prepare the Food Processor:

    • Add garlic cloves, roasted red peppers, and sambal to a food processor.
    • Add the ground toasted spices, salt, and black pepper.
  4. Blend the Ingredients:

    • Blend the ingredients to a chunky-smooth texture.
    • While blending, drizzle in olive oil until desired consistency is reached.
    • Avoid blending completely smooth; maintain some texture.
  5. Store the Harissa:

    • Remove the harissa from the food processor.
    • Store in an airtight container in the refrigerator.
  6. Usage Tips:

    • Use as a condiment for soups, dips, dressings, or marinades.
    • Add to beans and spinach with fennel.
    • Use on grilled vegetables like zucchini and broccoli rabe.
    • Use as a marinade by adding olive oil and wine vinegar.
    • Use as a dressing.

FULL RECIPE:

Harissa:

½ Tbs Caraway Seeds

½ Tbs Cumin Seeds

½ Tbs Coriander Seeds

4 garlic cloves, peeled

4 roasted red peppers = 1 Jar = 350g drained

2 Tbs Sambal (garlic-chili paste)

1 tsp Salt, kosher

½ tsp Black Pepper

2-3 Tbs Olive Oil

•Toast seeds until browned.

•Add into mortar and pestle and hand grind to semi-powder consistency.

•Add spices and remainder of ingredients to food processor and blend to a chunky-smooth texture. •Add oil while it's blending.

•Remove and store in airtight container in the fridge.
