BBQ Aubergine Fillets (Recipe 1 of 3)

Ingredients

  • Aubergine/Eggplant
  • BBQ Sauce
  • Sweet Chili Sauce

Instructions

  1. Prepare the Aubergine/Eggplant:
    • Slice the aubergine/eggplant in half.
    • Place in a pan and bake at 200 degrees Celsius/400 degrees Fahrenheit for 15-20 minutes, until soft and wrinkled.
    • Remove from the oven and let cool.
    • Scoop out the flesh with a spoon, keeping it in one piece to create a fillet.
  2. Marinate the Aubergine Fillets:
    • Marinate some fillets in BBQ sauce and others in sweet chili sauce overnight.
  3. Grill the Aubergine Fillets:
    • Dip the marinated fillets in the respective sauces again.
    • Place on the grill and cook until nicely colored and heated through, ensuring to get right down in the grill.
  4. Serve:
    • Remove from the grill and serve.

BBQ Butternut Squash Steaks (Recipe 2 of 3)

Ingredients

  • Butternut Squash
  • BBQ Spice
  • BBQ Sauce

Instructions

  1. Prepare the Butternut Squash:
    • Cut butternut squash into steaks about 1 inch thick.
    • Cook until a skewer goes through easily, then let cool overnight.
    • Peel the cooled butternut squash steaks.
  2. Season the Butternut Squash:
    • Coat the butternut squash steaks with BBQ spice on all sides.
  3. Grill the Butternut Squash:
    • Place on the grill and cook until nicely charred.
    • Dip the steaks in the BBQ sauce during grilling.
  4. Serve:
    • Remove from the grill and serve.

BBQ Cabbage Steaks (Recipe 3 of 3)

Ingredients

  • Red Cabbage
  • Green Cabbage
  • Sweet Chili Sauce
  • BBQ Sauce
  • BBQ Spice
  • Hoisin Sauce (optional)

Instructions

  1. Prepare the Cabbage:
    • Cut the cabbages into steaks.
    • For the green cabbage, peel off the outer leaf if it's dry.
  2. Season and Marinate the Cabbage:
    • Lather the red cabbage steak with sweet chili sauce.
    • Press BBQ spice into the green cabbage steak and rub it in.
    • Optionally, add a little hoisin sauce to the green cabbage during grilling.
  3. Grill the Cabbage:
    • Place the cabbage steaks on the grill.
    • Baste the green cabbage with BBQ sauce during grilling.
  4. Cook and Serve:
    • Cook the cabbage steaks on the grill, peeling off any burnt outer leaves if desired.
    • Remove from the grill and serve.
