Creamy Miso Ramen with Shiitake and Tofu
Ingredients
- Ramen noodles
- Shiitake mushrooms
- Tofu
- Bok choy
- Chili peppers
- Miso
- Oat milk (Oatley brand recommended)
- Barbecue seasoning
- Boiling water
Instructions
- Sear the Vegetables: Season the shiitake mushrooms, tofu, and bok choy with barbecue seasoning and sear them in a pan until nicely browned.
- Build the Broth:
- Add boiling water to the seared vegetables.
- Stir in miso to taste.
- Add a splash of oat milk (Oatley brand recommended) to create a creamy broth.
- Assemble the Ramen:
- Cook the ramen noodles according to package directions.
- Add the cooked noodles to the creamy miso broth.
- Garnish with chili peppers for added spice.
