GROW YOUR OWN STEAK?! Lions Mane Mushroom Recipe | Wicked Kitchen

Lion's Mane Mushroom Steaks

Ingredients

Ingredients:

  • 1 large Lions Mane Mushroom
  • Vegetable oil, for the pan

For the Marinade:

  • Pre-cooked beets
  • Olive oil
  • Wicked Kitchen BBQ Beef Seasoning
  • Garlic
  • White pepper
  • Black pepper
  • Fresh thyme

Instructions

  1. Grow the Lion's Mane Mushroom:

    • Obtain a Lion's Mane mushroom grow kit.
    • Follow the kit instructions for growing the mushroom (approximately a couple of weeks).
    • Spray with water 2-3 times a day, and place in indirect sunlight.
  2. Prepare the Mushroom:

    • Once the mushroom has grown, harvest it.
  3. Sear the Mushroom:

    • Heat a cast iron pan until very hot.
    • Add a little vegetable oil to coat the surface.
    • Place the Lion's Mane mushroom in the hot pan.
    • Let it sit and sear without pressing for a couple of minutes, allowing caramelization to begin.
    • Press lightly with a pan on top to flatten the mushroom and increase surface contact.
    • Flip the mushroom and wipe the bottom of the pan.
    • Add the mushroom back to the pan and press halfway.
  4. Prepare the Marinade:

    • Blend the pre-cooked beets (and garlic if using fresh) in a Vitamix or blender.
    • Strain the blended mixture to obtain a smooth liquid.
    • Add olive oil, Wicked Kitchen BBQ Beef Seasoning, white pepper, and black pepper to the strained liquid.
  5. Marinate the Mushroom:

    • Place the seared mushroom in a container.
    • Pour the marinade over the mushroom, ensuring it is submerged.
    • Add fresh thyme.
    • Refrigerate and marinate for 1-2 days.
  6. Cook the Marinated Mushroom:

    • After marinating, strain the mushroom for about an hour to remove excess marinade.
    • Heat the pan with a little vegetable oil.
    • Season the pan with a little bit of salt and pepper.
    • Place the marinated mushroom in the hot pan.
    • Cook, being careful of potential flare-ups due to the marinade's liquid content.
    • Flip the mushroom and ensure it's nicely browned on each side.
  7. Rest and Slice:

    • Transfer the cooked mushroom to a cutting board.
    • Let it rest for a couple of minutes.
    • Slice and serve.

Recipe/RnD:

To make this dish, all you'll need is one large Lions Mane Mushroom and a bit of vegetable oil for the pan. For the marinade, I used a blend of pre-cooked beets, olive oil, Wicked Kitchen BBQ Beef Seasoning, garlic, white pepper, black pepper, and fresh thyme. After blending all the ingredients (except the thyme), simply strain the mixture and use the liquid as your marinade.
