Vegan Buffalo Tofu with Roasted Vegetables and Brown Rice
Ingredients
Ingredients:
- 1 ½ - 2 blocks of extra firm tofu, cubed
- 2 tbsp BBQ dry seasoning
- x1 100ml bottle Frank’s Red Hot sauce
- 1 handful/pack snipped fine green beans
- 1 handful/pack tenderstem broccoli/broccolini
- Brown Rice (either made fresh or microwaved)
- Sunflower oil
- Salt
- Cracked black pepper
- 1 tbsp vegan butter (or regular butter)
- Fresh parsley, to garnish
Instructions
Preheat Oven:
- Preheat oven to 200°C (fan) or 400°F.
Prepare Tofu:
- In a large metal bowl, toss cubed tofu with 1 tbsp oil and BBQ rub to coat evenly.
Sear Tofu:
- Heat a cast-iron skillet until hot and add 2 tbsp oil.
- Add tofu to the pan and sear on each side until crispy.
- Remove the tofu from the pan.
Prepare Broccoli:
- In the same bowl (used for the tofu), add broccoli and drizzle with a little oil.
- Season with ½ teaspoon of salt and pepper to coat.
Arrange Vegetables and Tofu on Baking Tray:
- Line a baking tray with baking paper.
- Place seasoned broccoli on one side of the tray.
- Add seared tofu to the baking tray.
Cook Green Beans:
- In the same hot cast-iron pan, add green beans and a tiny bit of water.
- Add a pinch of black pepper and cook for 2 minutes.
- Place green beans onto the baking pan with the other ingredients.
Bake:
- Heat in the preheated oven for 10 minutes to heat and crisp up the outer edges while leaving the centers juicy.
- Remove from oven.
Prepare Buffalo Sauce:
- On medium-low heat, in the metal bowl (or another metal bowl), add the entire bottle of hot sauce.
- Add 1 tbsp of vegan butter and whisk until melted and smooth.
Coat Tofu in Buffalo Sauce:
- Add the baked tofu to the sauce and coat evenly.
Serve:
- Serve with rice and the roasted vegetables.
- Spoon the hot saucy buffalo tofu over the rice and vegetables.
- Garnish with fresh parsley, if desired.

In this video we show you a tried and true cast iron pan frying method to crisp up the sides of the tofu before tossing it in a classic Buffalo-style hot sauce. This is a great vegan recipe to make as an appetizer alone, but we also show you how to punch it up into a full meal by adding brown rice, roasted broccolini and green beans.

Directions:
Preheat oven to 200c fan or 400f
In a large metal bowl Toss cubed tofu in 1 tbsp oil and BBQ rub toss to coat each piece evenly.
In a cast-iron skillet, heat - hot and add 2 tbsp oil
Add tofu to the pan, sear on each side.
In same bowl, add broccoli and toss in a drizzle of oil (to help seasoning stick) and ½ teaspoon of salt and pepper to coat.
Onto a baking paper lined baking tray, place seasoned broccoli to one side, leave room for the other ingredients. Add seared tofu.
In hot cast-iron pan, add green beans and a tiny bit of water, pinch of black pepper and cook for 2 minutes then place beans onto baking pan with other ingredients.
When ready for dinner heat in preheated over for 10 minutes. This will heat and crisp up the outer edges and will leave the centres juicy.
Remove from oven.
On medium-low heat, in metal bowl add the whole bottle of hot sauce, along with a tbsp of vegan butter, whisk it up until it’s all melted. Add tofu to the sauce, and coat evenly.
Serve with rice and the veggies and the hot saucy buffalo fu. Parsley garnish optional.
