FAST Meals That Will Save Your Sanity

Quick Weekday Tofu, Chickpea, and Greens Meal

Ingredients

  • 1 block extra firm tofu, sliced thin
  • 1 can chickpeas, liquid and all
  • 1 big bunch greens (cabbage, kale, chard), chopped
  • 4 large carrots, chopped
  • 5 potatoes, cubed
  • 1 onion, julienned
  • 2 cloves garlic, minced
  • 2 chillies, chopped (optional)
  • Olive oil (optional)
  • Salt and pepper to taste
  • Nutritional yeast, for garnish

Instructions

  1. Boil potatoes and carrots in a pot of water until potatoes are easily pierced with a knife. Turn off the heat.
  2. Add the chopped greens to a large bowl.
  3. Carefully pour the hot potato and carrot water over the greens to blanch them. Drain the greens, reserving the pot.
  4. Heat a little olive oil in the same pot (optional).
  5. Add salt to the pan to help gauge the heat and prevent sticking.
  6. Add sliced tofu, minced garlic, julienned onions, and chopped chilies (if using) to the pot and sauté for a few minutes until fragrant.
  7. Add the can of chickpeas (with liquid) and heat through.
  8. Add the blanched greens to the pot. Lower the heat to medium.
  9. Season with black pepper and salt.
  10. Cook for about 10 minutes, stirring occasionally, until the greens are vibrant green and heated through.
  11. Garnish with nutritional yeast and serve hot.

This made enough for 4 LARGE meals and average cost was £5 / $6. Might be more if you buy precut veg or pre chopped greens and still well worth it.
