Reverse Sear Lion's Mane Steak (Recipe 1 of 4)
Ingredients
- Lion’s mane mushrooms (Grapefruit size)
- Olive oil
- Salt and black pepper
- Granulated garlic
- Butter
- Fresh thyme
- 2-3 cloves garlic, peeled
- Red wine (for deglazing, optional)
Instructions
- Preheat the oven to 250°F (125°C).
- Brush mushrooms with a thin layer of olive oil. Season both sides with salt, pepper, and garlic powder.
- Place mushrooms on a wire rack on a baking sheet and cook in the oven for 1 hour.
- Heat a cast iron skillet over medium-high heat.
- Press the mushrooms with a second pan for a few seconds to create a seared texture.
- Add butter, garlic, and thyme.
- Flip, and baste until mushrooms are golden brown.
- Optionally, deglaze the pan with a splash of red wine and reduce until slightly thickened.
Golden Sear Potatoes (Recipe 2 of 4)
Ingredients
- 5 medium potatoes
- Salt
- Olive oil
Instructions
- Halve potatoes and add to a pot with water. Bring to a boil, then turn off the heat.
- Drain and let sit for a minute.
- Heat a pan with oil and a pinch of salt. Place potatoes cut-side down and sear until golden.
- Roast in oven at 200c/400f for 20 -30 minutes
Roasted Cauliflower with Mustard-Tahini Sauce (Recipe 3 of 4)
Ingredients
- Cauliflower, broken into bite-sized pieces
- 2 tbsp mustard
- 3 tbsp tahini
- Olive oil, salt, and black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Blanch cauliflower in boiling water for 1-2 minutes, then drain.
- Mix mustard, tahini, olive oil, salt, and pepper, then toss cauliflower to coat.
- Spread on a baking sheet and roast for 25 minutes until golden.
Quick Sautéed Zucchini (Recipe 4 of 4)
Ingredients
- Zucchini, sliced
- Olive oil
- Salt and pepper
- Steak seasoning (optional: coriander, cumin, chili powder)
Instructions
- Toss zucchini slices in olive oil, salt, pepper, and steak seasoning.
- Sauté in a hot pan until tender and golden.
