An Amazingly Easy and Delicious, Sandwich Filler Meal Prep

Cry Baby Sandwich (Recipe 1 of 2)

Ingredients

  • 1 block extra firm tofu, 350g, shaved
  • 1 sub roll / sandwich bread or large wrap
  • 1 tablespoon capers
  • 4–5 long dill pickle slices, diced
  • 4-5 green onion, sliced
  • 3 teaspoons Garlic and Herb Nutritional Yeast (see video for recipe, or use store-bought)
  • 3 slices vegan cheese
  • 1 jalapeno, diced
  • 1 tomato, sliced
  • Handful of rocket (arugula)
  • Handful Savoy cabbage, shaved
  • 2 tablespoons vegan mayo
  • 1 tablespoon Dijon mustard
  • Flake salt & pepper
  • Olive oil drizzle (optional)

Instructions

  1. Shave the extra firm tofu as thinly as possible. Set aside a few pieces for a snack if desired.
  2. Dice the dill pickle slices and slice the green onions.
  3. Combine the shaved tofu, diced pickles, sliced green onions, capers, diced jalapeno, garlic and herb nutritional yeast, vegan mayo, Dijon mustard, flake salt, and pepper in a bowl.
  4. Mix well, breaking up the tofu pieces slightly.
  5. Taste and adjust seasonings as needed.
  6. Slice the tomato.
  7. Assemble the sandwich: Layer vegan cheese slices, shaved savoy cabbage, tomato slices, and rocket (arugula) on the sub roll.
  8. Add the tofu mixture on top.
  9. Drizzle with olive oil, flake salt and pepper (optional).
  10. Wrap the sandwich tightly to compress it for easier eating.
  11. Cut in half and serve immediately or store in the refrigerator for later.

Sesame Kale and Cabbage Salad (Recipe 2 of 2)

Ingredients

  • 200g kale, chopped (stems removed)
  • 100g baby spinach
  • 100g savoy cabbage, shaved
  • 1-2 tablespoons sesame oil
  • Splash of soy sauce (dark or light)
  • Flake salt & pepper

Instructions

  1. Rinse the chopped kale and baby spinach.
  2. Place the chopped kale, baby spinach, and shaved savoy cabbage in a large bowl.
  3. Boil water and pour it over the greens in the bowl. Let sit for a moment to wilt the greens.
  4. Strain the greens and rinse with cold water to stop the cooking process.
  5. Squeeze out any excess water from the greens.
  6. Add the sesame oil, soy sauce, flake salt, and pepper to the greens.
  7. Mix well.
  8. Chill before serving.

4 – 5 long dill pickle slices, diced

4 -5 green onion, sliced

3 slices, vegan cheese

1 jalapeno, diced

1 tomato, sliced

Handful of rocket

Handful Savoy cabbage, shaved

2 tablespoons Vegan Mayo

1 tablespoon, Dijon

Flake salt & Pepper

Olive oil drizzle (optional)

Greens:

200g kale, chopped

100g baby spinach

100g savoy cabbage, shaved

1 -2 tablespoons Sesame oil

Splash of soy sauce (dark or light)

Flake Salt & Pepper

Rinse, pick out stems, boil water and add boiling water to greens in a big bowl. Strain, rinse with cold water, squeeze out excess water. Add sesame, salt and pepper and chill before serving.
