Tofu Cucumber Chili Crunch Salad

Ingredients

  • 450g extra super firm tofu, cubed
  • 1 large English cucumber, cubed
  • 2 tbsp spicy chili crunch (Lao Gan Ma brand used)
  • 2 tbsp sesame oil
  • Green onions (scallions), diced
  • Fresh mint, chopped
  • Thai basil, chopped
  • Optional garnish: Romaine lettuce, crispy onions/shallots

Instructions

  1. Marinate the Tofu:
  • Cube the tofu and place it in a bowl.
  • Add 2 tablespoons of spicy chili crunch and 2 tablespoons of sesame oil to the tofu.
  • Gently stir to combine, being careful not to break the tofu.
  • Allow the tofu to marinate while you prepare the remaining ingredients. 2. Prepare the Cucumber:
  • Cut the cucumber in half lengthwise, then in half again.
  • Cut each quarter in half again
  • Cut each piece into thirds, then dice into cubes similar in size to the tofu. 3. Prepare the Green Onions:
  • Dice the green onions.
  • Place the diced green onions in a fine mesh strainer.
  • Rinse under cold water to help them stay fresh and remove any dirt.
  • Allow the green onions to sit and dry. 4. Prepare the Herbs:
  • Roughly chop the fresh mint and Thai basil.
  • Roll the leaves up into a ball and chop them to release the flavors. 5. Combine Ingredients:
  • Add the diced cucumber, chopped herbs, and green onions to the bowl with the marinated tofu.
  • Stir to combine. 6. Serve:
  • (Optional) Create a bed of romaine lettuce on a plate.
  • Spoon the tofu cucumber salad over the lettuce.
  • Garnish with crispy onions or shallots.
  • Serve immediately or chill for later.
