Artichoke and Hearts of Palm Baguette with Roasted Tomatoes (Recipe 1 of 2)
Ingredients
For the Roasted Tomatoes:
- Halved tomatoes
- Thyme
- Crushed garlic
- Salt
- Pepper
For the Artichoke and Hearts of Palm Dip:
- Hearts of palm
- Artichoke
- Non-dairy cream cheese (almond cream cheese suggested)
- Red onion
- Spinach
- Old Bay seasoning
- Kelp granules (seaweed)
- Nutritional yeast
For Assembly:
- Whole grain baguette
Instructions
For the Roasted Tomatoes:
- Preheat oven to 375°F (190°C).
- Prepare the tomatoes: Place halved tomatoes on a baking sheet.
- Season the tomatoes: Add thyme, crushed garlic, salt, and pepper.
- Roast the tomatoes: Bake for 15-20 minutes, or until the flavors have intensified.
For the Artichoke and Hearts of Palm Dip:
- Pulse the base: In a food processor, pulse the hearts of palm and artichoke until a crab dip-like consistency is achieved.
- Combine ingredients: In a bowl, add the pulsed mixture, non-dairy cream cheese, red onion, spinach, Old Bay seasoning, kelp granules, and nutritional yeast.
- Mix well: Thoroughly mix all the ingredients together.
For Assembly:
- Prepare the baguette: Slice a whole grain baguette.
- Spread the dip: Spread the artichoke and hearts of palm mixture evenly over the baguette slices.
- Add tomatoes: Top with the roasted tomatoes.
- Toast: Toast in the oven until the baguette is heated through.

- Whole wheat pizza crust
- Barbecue sauce
- Roasted sweet potatoes (diced)
- Carrots (diced)
Instructions
- Preheat oven according to pizza crust directions.
- Spread the barbecue sauce: Spread barbecue sauce evenly over the whole wheat pizza crust.
- Add toppings: Add diced roasted sweet potatoes and carrots.
- Bake: Bake according to pizza crust instructions.
