Peppercorn Crusted Tofu Sandwich (Recipe 1 of 2)

Ingredients

For the Tofu:

  • 1 block firm tofu
  • 3 TBS vegan mayo
  • 1 TBS Dijon mustard
  • 1 tsp black peppercorns, crushed
  • 1 tsp white peppercorns, crushed
  • 1 tsp fennel seeds, crushed
  • Oil for pan roasting
  • Salt for seasoning pan

For the Sandwich:

  • ½ red onion, sliced
  • 2 roasted red bell peppers, sliced
  • Lettuce, sliced
  • Baguette
  • Butter (optional, for toasting bread)
  • Sriracha or hot sauce (optional)

Instructions

  1. Preheat Oven: Preheat oven to 200°C/400°F.

  2. Prepare Spices: Grind black peppercorns, white peppercorns, and fennel seeds in a mortar and pestle until coarsely crushed.

  3. Prepare Tofu:

    • Drain the tofu and squeeze out excess water.
    • Heat a pan over medium-high heat.
    • Add a little oil and salt to the pan for seasoning (season the pan, not the tofu directly).
    • Pan roast the tofu slowly to form a crust on both sides.
    • Remove from pan and slice lengthwise into two equal pieces.
  4. Season and Bake Tofu:

    • Add 2 TBS of vegan mayo, Dijon mustard, and crushed spices to one side of the sliced tofu.
    • Finish in the oven for 15 minutes.
  5. Toast the Bread (Optional):

    • Slice the baguette.
    • Apply a thin layer of butter (optional).
    • Toast it in the oven along with the tofu.
  6. Assemble the Sandwich:

    • Apply extra vegan mayo to the bread if desired.
    • Add sliced red onion, roasted red bell peppers, and lettuce.
    • Place the baked peppercorn-crusted tofu on top.
    • Add sriracha or hot sauce if desired.
  7. Serve: Wrap the sandwich to compact it and make it easier to eat. Cut in half to serve.

Roasted Dog Treats (Carrots and Sweet Potato) (Recipe 2 of 2)

Ingredients

  • Carrots
  • Sweet potato

Instructions

  1. Prepare Vegetables: Wash and prepare carrots and sweet potato (peeling optional).
  2. Roast Vegetables: Roast carrots and sweet potato in a dutch oven at 200°C/400°F for 60+ minutes. Check for doneness by piercing with a skewer until it passes through easily.
  3. Cool and Slice: Allow to cool completely. Slice into appropriate sizes for treats.
  4. Serve and Store: Serve as treats throughout the week. Sweet potato can be added to dog meals.

Peppercorn tofu Sandwich

Toppings:

½ red onion, sliced

2 roasted red bell peppers, sliced

Lettuce, sliced

Preheat oven to 200c/400f

Grind spices in mortar and pestle until coarse

Pan roast tofu over med-high heat slowly to form crust on both sides. Save some mayo for finishing the sandwich

Remove from pan. Slice length wise to give you two equal pieces.

Add 2 TBS mayo and the mustard and spices to one side.

Finish in the oven for 15 mins

Assemble the sandwich with toppings, use added mayo. Hot sauce optional.

Roast in a dutch oven @ 200c/400f for 60 plus minutes,

Check to make sure a skewer can pass through easily.

Allow to cool and slice. Good for all weeks worth of treats for my dog and I use the sweet potato to add to her meals.
