Sheet Pan Pizza Dough (Recipe 1 of 3)

Ingredients

  • 3 cups all-purpose flour
  • Sea salt (to taste, mixed with flour)
  • Fast acting yeast (mixed with flour)
  • Warm water
  • Olive oil (for greasing the pan)

Instructions

  1. Mix Dry Ingredients: Combine flour, sea salt, and fast-acting yeast in a bowl. Make a well in the center.
  2. Add Water: Pour warm water into the well and stir to combine until all the flour is picked up. The dough will be shaggy.
  3. First Rise: Cover the bowl with plastic wrap and let it sit for 3-4 hours to expand. (Note: The video uses a double batch of dough.)
  4. Prepare Sheet Pans: Spray two quarter sheet pans with cooking spray, ensuring the edges are coated. Alternatively, pour some olive oil on the pans and rub it around with a paper towel.
  5. Divide Dough: Drop the dough onto the prepared sheet pans and cut it in half.
  6. Spread Dough: Spread the dough out as much as possible in the pans.
  7. Second Rise: Let the dough sit and proof in the pan for about 45 minutes to an hour. You can stretch the dough a little every 15-20 minutes to encourage it to reach the edges of the pan.
  8. Preheat Oven: Preheat the oven to 475-500°F.

Classic Marinara Sheet Pan Pizza (Recipe 2 of 3)

  • Olive oil (for drizzling)
  • Vegan parmesan cheese
  • Vegan mozzarella cheese
  • Black pepper (to taste)
  • Dried Italian seasoning or dried oregano
  • Red sauce (pizza sauce or Nana's marinara)

Instructions

  1. Prepare the Dough: Follow the instructions for the Sheet Pan Pizza Dough and place the proofed dough in the sheet pan.
  2. Preheat Oven: Preheat oven to 475-500°F.
  3. Prepare the Base: Drizzle olive oil on top of the dough.
  4. Add Cheese: Sprinkle vegan parmesan cheese evenly over the dough, followed by vegan mozzarella.
  5. Add Seasoning: Sprinkle with black pepper and dried Italian seasoning or dried oregano.
  6. Add Sauce: Dollop red sauce (pizza sauce or Nana's marinara) over the cheese.
  7. Bake: Bake in the preheated oven until the crust is golden brown and the cheese is bubbly and melted, approximately 15-20 minutes. Look for the dough to be pulling away slightly from the edges of the pan.
  8. Rest: Let the pizza rest for 5-10 minutes before slicing and serving to allow the cheese and fats to settle.

Ingredients

  • Sheet Pan Pizza Dough (recipe above)
  • Olive oil (for cooking)
  • Vegan sausage (such as Wicked Chorizo)
  • King oyster mushrooms (or cremini, portabellas, or shiitakes), sliced
  • Red onion, diced
  • Jalapenos, sliced
  • Red sauce (pizza sauce or Nana's marinara)
  • Vegan parmesan cheese
  • Vegan mozzarella cheese
  • Olive oil (for drizzling, after topping)
  • Black pepper (to taste)

Instructions

  1. Prepare the Dough: Follow the instructions for the Sheet Pan Pizza Dough and place the proofed dough in the sheet pan.
  2. Prepare Toppings:
    • Heat olive oil in a pan over medium heat.
    • Add vegan sausage and cook, breaking it up into crumbles.
    • Remove from heat.
