Vegan Nacho Cheese Sauce
Ingredients
Ingredients:
- 1/2 head cauliflower, chopped
- Sweet potatoes, scrubbed and chopped (skins on)
- 5 cloves garlic (added during boiling of potatoes and cauliflower)
- 1 bay leaf (removed after boiling)
- 4-5 tablespoons salsa (store-bought)
- 1 package (amount not specified) vegan American-style cheese (e.g., Follow Your Heart brand)
- 1 tablespoon cumin
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Pinch of salt
- Pinch of black pepper
- 4-5 tablespoons nutritional yeast
- Chickpea water (amount not specified)
- 1 roasted jalapeño, chopped
Instructions
- Boil Cauliflower and Sweet Potatoes:
- Fill a pot with water.
- Add the chopped sweet potatoes (with skins on) to the pot.
- Add one bay leaf.
- Bring to a boil.
- Add 5 cloves of garlic once boiling.
- Cook for 5-10 minutes until the sweet potatoes are super soft and easily break apart with a fork.
- Remove the bay leaf.
- Add the chopped cauliflower to the pot with the sweet potatoes.
- Shut off the heat.
- Add the cauliflower and potatoes to a blender, ensuring the cooked garlic is included.
- Prepare Remaining Ingredients:
- Char one jalapeño in a pan
- Chop the charred jalapeño and add to the blender.
- Add 4-5 tablespoons of store-bought salsa to the blender.
- Add the vegan American-style cheese to the blender.
- Add 1 tablespoon of cumin to the blender.
- Add 1 teaspoon of onion powder to the blender.
- Add 1 teaspoon of smoked paprika to the blender.
- Add a pinch of salt and a pinch of black pepper to the blender.
- Add 4-5 tablespoons of nutritional yeast to the blender.
- Add the remaining chickpea water to the blender.
- Blend the Sauce:
- Start blending on low speed and gradually increase to higher speed.
- Blend for at least 2 minutes until the sauce is smooth and creamy.
- Test and Serve:
- Taste the sauce and adjust seasonings as needed.
- Serve hot as a dip, over nachos, or in mac and cheese.
