Vegan Tom Kha Soup
Ingredients
Aromatics:
- Shallots (or any kind of onion)
- Thai chilies (to taste)
- Lemongrass (bruised)
- Kaffir lime leaves (crushed)
- Galangal root slices (or ginger)
- Garlic
Soup Base:
- Full-fat coconut milk (2 cans)
- Water (double the amount of coconut milk)
- Plant-based chicken bouillon (or vegetable bouillon)
- Lime juice (typically 2 limes)
- Sea salt
- Agave (touch, or sugar)
Vegetables & Protein:
- Broccoli florets
- Carrots
- Firm tofu (pressed)
Garnish:
- Thai basil (or regular basil)
- Flowering cilantro (or regular cilantro)
- Extra chili (optional)
Instructions
- Sauté the Aromatics:
- Heat a pan over medium heat (medium-high initially, then medium).
- Add a little oil (or start with a hot pan for oil-free cooking, using vegetable stock to deglaze).
- Add shallots and sauté.
- Add chilies, bruised lemongrass, and crushed kaffir lime leaves.
- Sauté for a while, then add galangal root (or ginger).
- Add garlic towards the end of this stage to prevent burning.
- Create the Soup Base:
- Lower the heat to medium-low.
- Add coconut milk and water.
- Add bouillon.
- Squeeze in lime juice (and optionally add the squeezed lime for a bitter note).
- Add sea salt and agave (or sugar).
- Simmer the Soup:
- Let the soup simmer to reduce and marry the flavors.
- Add Vegetables and Tofu:
- Add broccoli and carrots.
- Once the broccoli is vibrant and mostly cooked, add the pressed firm tofu.
- Garnish and Serve:
- Finish with Thai basil (or regular basil) and flowering cilantro (or regular cilantro).
- Optionally add extra chili.
- Inform diners about inedible pieces (lemongrass, kaffir lime leaves, galangal root).
