Honey Mustard Lions Mane "Pork" Chops

Ingredients

For the Mushrooms:

  • 2-4 fist-sized Lions Mane Mushrooms
    • (Pressed or boiled using video methods)

For the Marinade:

  • 4 TBS Apple Cider Vinegar
  • 4 TBS Agave
  • 2 TBS Olive Oil (optional)
  • 2 TBS Dijon Mustard
  • 1 TBS Hot Mustard
  • 1 TBS Fresh Thyme
  • 1 TBS Fresh Sage
  • 1 TBS Chives
  • 4 cloves Garlic, chopped

For the Roast Potatoes:

  • 6-7 Potatoes (Maris Piper recommended), cut into 6ths
  • 2 TBS Olive Oil
  • 1 TBS Smoked Paprika
  • 1 TBS Onion Granulated
  • 1 tsp Garlic Granulated
  • Salt & Pepper

For the Jiffy Pop Green Beans:

  • 300g Green Beans, blanched
  • 2 cloves Garlic, chopped
  • 1 tsp Oil (optional)
  • Salt and Pepper to taste

Instructions

Prepare the Mushrooms:

  1. Choose your preferred method: Pressing or Boiling (refer to video for detailed instructions).
    • Pressing Method: Steam the mushroom by placing the mushroom under a cast iron pan with a cover. Use some water in the pan.
    • Boiling Method: Submerge the mushrooms in boiling water for about 10 minutes. Save the broth for later use in the sauce.

Marinate the Mushrooms:

  1. Combine all marinade ingredients in a bowl.
  2. Add the mushrooms to a Ziploc bag.
  3. Pour the marinade over the mushrooms, ensuring they are well coated.
  4. Marinate for a minimum of 30 minutes, or preferably overnight.

Prepare the Roast Potatoes:

  1. Cut the potatoes into 6ths.
  2. Place potato chunks in a medium saucepan with water.
  3. Bring to a boil and cook for 2-3 minutes until parboiled.
  4. Drain the potatoes.
    • Save some of the liquid to blanch the green beans.
  5. In a bowl, combine the potatoes with olive oil, smoked paprika, onion granules, garlic granules, salt, and pepper.
  6. Toss well to coat.
  7. Spread the potatoes on a baking sheet.
  8. Roast at 200°C/400°F for 20 minutes.

Prepare the Jiffy Pop Green Beans:

  1. Blanch the green beans in the potato/mushroom broth.
  2. Sauté the green beans with or without oil/butter.
  3. Add chopped garlic.
  4. Season with salt and pepper to taste.
  5. Cover and shake.

Grill the Mushrooms:

  1. Preheat grill to medium-high heat.
  2. Grill the marinated mushrooms like you would meat, basting with the marinade.
  3. Flip occasionally to ensure even cooking.
  4. Cook until grill marks appear and mushrooms are cooked through.

Make the Sauce:

  1. In a pan, combine a little bit of the mushroom broth, a little bit of oat milk, a spoonful of mustard, and some chives.
  2. Reduce the sauce until slightly thickened.

Assemble and Serve:

  1. Slice the grilled Lions Mane "Pork" Chops.
  2. Drizzle with the prepared sauce.
  3. Serve alongside the roast potatoes and Jiffy Pop green beans.

RECIPE:

Honey’ Mustard Pork’ Chops, AKA, Lions Mane Loin Steaks:

2 – 4 fist sized, Lions Mane Mushrooms, pressed or boiled as shown in the video methods

Marinade:

4 TBS Apple cider vinegar

4 TBS Agave

2 TBS Olive Oil (optional)

2 TBS Dijon Mustard

1 TBS Hot Mustard

1 TBS Fresh Thyme

1 TBS Fresh Sage

1 TBS Chives

4 cloves Garlic, Chopped

Add marinade to mushrooms suggested for a minimum of 30 minutes or overnight for best results. Then grill as normal.

Roast Potatoes:

6 -7 Potatoes, (Maris Piper used here) Cut into 6th’s

2 TBS olive oil

1 TBS smoked paprika

1 TBS Onion Granulated

1 tsp garlic granulated

Salt & Pepper

Add to medium saucepot with water and bring to boil for 2-3 minutes, drain, add potatoes, onion and seasoning to bowl, toss and mix well then place on baking sheet. Roast @200c/400f for 20 minutes

Jiffy Pop Green Beans:

1 300g Green Beans, blanched

2 cloves garlic, chopped

1 teaspoon oil (optional)

Salt and pepper to taste

Saute with or without oil/butter and season to taste
