Ingredients

Ingredients:

  • 2 100g Tofu blocks Extra Firm, cubed (1 smoked - 1 plain)
  • 7 bigger than baby potatoes or 2 Med Potatoes, cubed (NOT BOILED)
  • 11 Med size chestnut or button mushrooms, trimmed stem
  • Handful cherry tomatoes
  • 2 Shallots, sliced thin
  • 2 Kale stalks, leaves picked and shredded
  • 2 TBS Chives, chopped
  • 2 TBS butter, plant-based or Olive oil
  • 2 TBS pickled Jalapenos with juice
  • Onion powder
  • Garlic powder
  • Salt
  • Pepper

Instructions

Instructions:

  1. Cook the Potatoes and Shallots:

    • Add potatoes to a cast iron pan.
    • Add a couple of drops of water.
    • Add a little bit of plant-based butter.
    • Add the sliced shallots.
    • Cook on medium-high heat for 5-8 minutes, stirring occasionally, until potatoes are al dente (do not burn).
    • Move the potatoes to the side of the pan.
  2. Cook the Tofu:

    • Add another pat of butter to the pan.
    • Add the cubed tofu (mix smoked and plain).
    • Season with onion powder, garlic powder, salt, and pepper.
  3. Cook the Mushrooms:

    • Press the mushrooms to help with texture.
    • Leave them in the pan to the side to cook, ensuring they become juicy.
  4. Combine and Finish:

    • Add the chopped chives and shredded kale.
    • Add pickled jalapenos and a little juice for steam and flavor (optional).
    • Stir everything together to combine and ensure the kale is vibrant and cooked.
    • Taste and adjust seasoning as needed.
  5. Serve:

    • Arrange the hash on a plate.
    • Set aside the mushrooms on the side as the star of the show.
    • Garnish with fresh chives.
