Vegan Cheesy Smashed Potatoes
Ingredients
Ingredients:
- Cooked potatoes (pre-cooked in cold water)
- Neutral oil
- Black pepper
- Salt
- Truffle powder or truffle salt
- Parsley (for garnish)
- Shredded vegan cheese
- Water
Instructions
Smash the Potatoes:
- Smash the cooked potatoes, but not too thin.
Heat the Pan:
- Heat a cast-iron pan over medium-high heat.
- Add neutral oil to the hot pan.
Add Potatoes to Pan:
- Place the smashed potatoes in the hot pan.
- Avoid overcrowding the pan; cook in batches if necessary.
- Add a little more oil on top of the potatoes.
Season the Potatoes:
- Sprinkle black pepper and salt over the potatoes.
Cook Until Crispy:
- Let the potatoes sit in the pan without tossing to allow them to get crispy.
- Smash any potatoes that are not fully smashed during cooking.
Add Truffle Powder:
- Sprinkle truffle powder or truffle salt over the potatoes.
Flip the Potatoes:
- Once the potatoes are crispy on the bottom, flip them over.
Add Vegan Cheese:
- Cover the potatoes with shredded vegan cheese.
Steam to Melt Cheese:
- Add a touch of water to the pan to create steam.
- Cover the pan with a lid to help the cheese melt.
Garnish and Serve:
- Once the cheese is melted, remove from heat.
- Garnish with fresh parsley.
- Serve hot.
