Vegan Fried Rice with Sticky Teriyaki Oyster Mushrooms
Ingredients
For the Sticky Teriyaki Oyster Mushrooms:
- Oyster mushrooms (large cluster, torn into pieces)
- Oil
- Salt
- Black pepper
- Garlic powder
- Teriyaki sauce (or Wicked Sticky Teriyaki Sauce)
For the Fried Rice:
- Cooked jasmine rice (leftover, cold)
- Red onion (julienned and chopped)
- Frozen peas
- Frozen corn
- Snap peas
- Chickpeas
- Ginger (2 tablespoons, chopped)
- Green onions (sliced)
- Asparagus tips (diced)
- Fresno peppers (sliced, optional)
- Sesame oil
- Teriyaki sauce
- Salt
- Black pepper
Instructions
For the Sticky Teriyaki Oyster Mushrooms:
- Preheat oven to 422°F (217°C).
- Heat oil in a cast iron pan over medium-high heat.
- Add the oyster mushrooms to the hot pan. Ensure even distribution for searing.
- Season with salt, black pepper, and garlic powder.
- Drizzle teriyaki sauce over the mushrooms to caramelize.
- Place the cast iron pan in the preheated oven.
- Turn the oven off and remove from heat.
For the Fried Rice:
- Heat a Teflon-coated pan (or wok if available) over high heat.
- Add the red onion, frozen corn, ginger, and chickpeas to the hot pan.
- Add snap peas and asparagus tips.
- Add frozen peas.
- Drizzle sesame oil into the pan.
- Season with black pepper and a pinch of salt.
- Add the cold, cooked jasmine rice to the pan.
- Drizzle a few tablespoons of teriyaki sauce over the rice.
- Stir-fry for about 5 minutes, until everything is heated through.
- Add the sliced Fresno peppers (optional, for spice).
Assembly:
- Remove the sticky teriyaki oyster mushrooms from the oven.
- Serve the fried rice topped with the sticky teriyaki oyster mushrooms.
- Garnish with sliced green onions and red peppers.
