Garlic French Bread Pizza - White Pizza (Pesto & Spinach) (Recipe 1 of 2)
Ingredients
- 1 large, wide loaf of French bread or similar
- 230ml (approximately 1 cup) olive oil
- 225g extra firm tofu, shaved thin
- 4-5 tablespoons fresh pesto
- 3-4 tablespoons fresh grated garlic in olive oil
- 100g baby spinach (2 large handfuls), wilted and excess water squeezed out
- 1/3 of a leek, sliced into thin rounds
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Fresh cracked black pepper to taste
- Salt to taste
For the 'Melty Cheese':
- 5 tablespoons Oatly Greek-style yogurt (or any vegan Greek-style yogurt)
- 1 cup vegan shredded cheese (choose your favorite variety)
- A pinch of salt
Instructions
Prepare the Garlic Oil:
- Combine fresh grated garlic and olive oil.
- Crush lightly with a mortar and pestle.
- Add a pinch of salt to draw out the flavors.
Prepare the Tofu:
- Slice the block of tofu in half and shave thinly.
- Season the tofu for the white pizza: Combine shaved tofu with garlic oil, lemon zest, lemon juice, salt, and pepper. Mix well and allow to marinate.
Wilt the Spinach:
- Heat a touch of olive oil in a pan.
- Add a little bit of salt to the pan.
- Sauté the baby spinach until wilted.
- Strain the spinach and squeeze out excess water.
Prepare the 'Melty Cheese':
- Mix the vegan shredded cheese with the Greek-style yogurt until well combined.
- Add a pinch of salt if needed.
- Consider adding nutritional yeast for an extra cheesy flavor (optional).
Prepare the French Bread:
- Preheat your oven to 200°C (400°F).
- Cut the French bread in half lengthwise.
- Drizzle the cut sides with garlic oil, spreading it evenly.
Assemble the White Pizza:
- Spread pesto on the garlic bread base.
- Top with marinated tofu, sliced leeks, and wilted spinach, making sure it's all squeezed out.
- Add dollops of the 'melty cheese' mixture.
Bake the Pizza:
- Place the assembled pizza in the preheated oven.

Seasoning for Tofu (Sausage-Pepperoni Flavor):
- 2 tablespoons fresh garlic in olive oil
- 1 teaspoon red chili pepper flakes
- 1 teaspoon smoked paprika
- 1 teaspoon Oregano
- 1 tablespoon fennel seeds, crushed
- 1 teaspoon flake salt (use sparingly if fine salt)
- ¾ teaspoon black peppercorns, crushed
- Salt to taste
For the 'Melty Cheese':
- 5 tablespoons Oatly Greek-style yogurt (or any vegan Greek-style yogurt)

White Pizza Toppings:
225g extra firm tofu, shaved thin
4-5 tablespoons fresh pesto
3-4 tablespoons fresh grated garlic in olive oil
100g baby spinach (2 large handfuls), wilted and excess water squeezed out
1/3 of a leek, sliced into thin rounds
1 tablespoon lemon juice
1 teaspoon lemon zest
Fresh cracked black pepper to taste
Salt to taste
Red Pizza Toppings:
225g extra firm tofu, shaved thin
1 cup tomato sauce
Seasoning for Tofu (Sausage-Pepperoni Flavor):
2 tablespoons fresh garlic in olive oil
1 teaspoon red chili pepper flakes

1 teaspoon Oregano
