Sky Blue Oyster Mushroom Steak (Recipe 1 of 3)

Ingredients

Mushroom Steak:

  • 1 or more Oyster Mushrooms (the bigger the better)

Marinade:

  • Fresh thyme
  • Fresh rosemary
  • Splash of red wine
  • Garlic cloves
  • Dijon mustard (less than 1 tsp)
  • Fresh cracked pepper
  • Pinch of salt
  • Olive oil

Basting:

  • Vegan butter
  • Fresh tarragon
  • Fresh thyme

Instructions

  1. Press the Mushroom: Follow the pressing technique shown in the video to remove excess moisture and flatten the mushroom.

    • Place the oyster mushroom between two hot pans.
    • Press down on the top pan to extract moisture and flatten the mushroom.
    • Continue until mushroom is browned and crispy.
    • Wipe the bottom of the pan between sides.
  2. Prepare the Marinade:

    • Roughly chop fresh thyme and rosemary.
    • Add herbs to a bowl with smashed black peppercorns, red wine, Dijon mustard, olive oil, and a pinch of salt.
    • Stir to combine.
  3. Marinate the Mushroom:

    • Place the pressed mushroom steak in the marinade.
    • Flip it a couple of times to coat it well.
    • Let it sit in the refrigerator while preparing the rest of the meal.
  4. Grill the Mushroom Steak:

    • Heat a grill pan until hot.
    • Place the marinated mushroom steak on the grill.
    • Sear to get a nice char on both sides.
  5. Baste the Steak:

    • Baste the grilled mushroom steak with vegan butter, fresh tarragon, and fresh thyme.

Roasted Sweet Potato Wedges with Herbs and BBQ Seasoning (Recipe 2 of 3)

Ingredients

  • Sweet potatoes
  • Olive oil
  • Salt
  • Pepper
  • BBQ seasoning
  • Fresh rosemary
  • Fresh thyme
  • Fresh sage

Instructions

  1. Preheat the Oven: Preheat oven to 200°C (400°F).

  2. Prepare the Sweet Potatoes:

    • Scrub sweet potatoes well (do not peel).
    • Trim the tips off and cut them into wedges.
  3. Season the Sweet Potatoes:

    • Add sweet potato wedges to a bowl.
    • Drizzle with a little olive oil to coat.
    • Add a pinch of salt, pepper, and sugar.
    • Add roughly chopped fresh sage, thyme, and rosemary.
    • Sprinkle with BBQ seasoning.
  4. Roast the Sweet Potatoes:

    • Toss everything together to combine.
    • Arrange herbs at the bottom with sweet potatoes on top.
    • Place in the preheated oven.
    • Roast for 25-30 minutes, or until fork tender.

Spring Greens with Garlic, Chili, and Smoked Tofu (Recipe 3 of 3)

Ingredients

  • Spring greens, destemmed
  • 2-3 garlic cloves, chopped
  • 1-2 birds eye chili
  • 2 tablespoons olive oil
  • Smoked tofu
  • Pinch of black pepper
  • Pinch of salt

Instructions

  1. Blanch the Greens:

  2. Sauté the Greens:

    • Heat olive oil in a pan.
    • Add the smoked tofu and sauté.
    • Add chopped garlic and chilies.
  3. Cook the Greens:

    • Add greens to the pan.
    • Add a splash of water (about 2 tablespoons).
    • Cover and let it steam for a minute.
  4. Season and Finish:

    • Add a pinch of black pepper and salt.
    • If it dries out, add a little more water.
    • Break up the tofu as it cooks.
  5. Add Fresh Herbs:

    • Rip up fresh tarragon and thyme and throw that in.

Thank you, I will try harder, my STEAK just happens to be made from mushrooms, one I grew myself and even developed a specific cooking-pressing technique to do so. That so many are already using. :)
